Cooking when Company Comes

So, I had a bunch of freezer meals ready for when our baby arrived. They were really handy and I was glad we had them!

We had some left still, this last week, and I found another great use for them! We had unexpected company over for lunch, and I was so glad when I looked in our freezer! Usually, I just eat letovers from the previous supper for lunch, but there wasn't enough for all of us and I started to panic. I opened the freezer door, and there I saw a nice couple hotdishes just waiting for use. Of course! I just popped one into the stove for a half hour and lunch was ready!

So, my tip to you today on When Company Comes, is set aside some hotdishes or dry soup mixes to have on hand for a quick meal. That way, when guests do stop by, you will have no qualms about asking them to stay for lunch.

Some good meals we've had success with from the freezer:
  • Chicken Broccoli Crescent Bake
  • Turkey Wild Rice Casserole
  • Tossed Lasagna
  • Pot Pie (Vegetable or Meat)
  • Pea Soup

When Company Comes: Cleaning

This is a personal post. I mean, this is probably a very personal family preference as far as what I'm about to say. It pertains to cleaning.

When company comes, I must admit, it sends me into a flurry of cleaning things up. Particularly the kitchen floor and bathroom. I guess those get neglected more than I like to admit.

But either way, I tend to do a cleaning right before we know company is coming. Well, not RIGHT before, but if we will have supper guests, that morning or afternoon I will tend to start washing things up.

And here is where we come to the crutch of the matter.

If company is coming, washing the bathroom right before they come might not be the best time of choice. Why, you ask? Well, for our household, because I use PineSol cleaner, and it ends up being a fairly strong smell that lingers throughout our apartment.

M. comes home, and he can instantly tell I've been cleaning. And honestly, I'm not convinced that PineSol is the most aromatic or welcoming smell to come home to :)

So my advice (which I'll need to take myself), is if you know company is coming consider these options
  • Clean the bathroom the day before you know company is coming
  • Have a regular weekly day to clean the bathroom no matter when company comes
  • Clean the bathroom with natural cleaners that have a lighter smell or no smell
  • Just wipe down the counters
  • In the summer, open the windows
  • As a last resort, just make sure to clean the bathroom hours before company comes, and then burn a candle or make brownies or something

When Company Comes: How to Set a Table

When Company Comes....Cook!

Yum yum yum. I think homemade cinnamon rolls are one of the tastiest things ever....warm.....carmally...fresh. *sigh*

I've been looking at and bookmarking some recipes to have on hand for when we have overnight guests. Most of these I've found related to Christmas time, but the pictures sure make me drool!

When Company Comes : A peek in the past


I've told you before about the old book my sister gave me, "Betty Crocker's Easy Guide to Entertaining."

Everytime I read it, I have such fun. There really are some great ideas in it, but some of it is so classic. Here is an excerpt for your reading pleasure:

"One of the best cooks I know skips appetizers and serves her first course in the living room before small dinners.  'It really is a time saver. It keeps my guests occupied with something to eat while I am in the kitchen dishing up my main course and getting it to the table. I join my guests with a small serving of the first course for myself, and slip out before they have finished to heat rolls and attend to other last minute duties.' "

"Her first course is always something that can be assembled in advance on separate plates, such as an avocado half filled with mayonnaise and capers, or small aspics, or a crab ravigotte."

"She hands a fork and dinner napkin with each plate. When her main course is on the table, she moves guests to the dining room by saying, 'Shall we go in? Just leave plates, but will you bring your napkin?"

"Later, when she leaves the dining room briefly to get dessert or start coffee, she takes a minute or two to pile the first-course dishes on a tray and take them to the kitchen. This takes only an instant, but leaves the living room cleared as if by magic."

When Company Comes: A Schedule


One idea I read once, was posting a "schedule" for the day (for long term guests), either using a blackboard, posterboard, or white board.

Keep it simple, but you could include things like:
  • The weather forecast for the day (you know, sunny, cloudy, raining, etc)
  • 2-3 Timed events (i.e. Breakfast @ 8, Bike ride at 4pm, Ice cream at 7:30pm)
  • A good morning quote

When Company Comes: Saying Goodbye


I love this book, "A Life that Says Welcome" by Karen Ehman. It has alot of ideas I'd like to incorporate in our home eventually.

One of those ideas is that art of Saying Goodbye:

"The final moments of a visit can come too quickly and be filled with mixed emotions.....No matter what time they leave, don't let guests go empty-handed. Give everyone a special token as a reminder of their stay. There is excitement for the time spent together and sadness that it is coming to an end."

Some ideas include:
  • A box of chocolate and a "thanks for visiting" card
  • A local treat (fresh picked blueberries)

  • Jar of homemade jam
  • Loaf of homemade bread
  • A framed picture of something you did while here

When Company Comes: Enjoy Nature!

This summer I have been really enjoying the "weeds" that grow around my backyard and to & from my walk to work! :)

I forgot to take a picture of my table, but my July goal is to keep my table clear, clean, and have a vase of fresh flowers on it. I also have some really fun place mats from India that add a nice touch.

I think it's so pretty to have flowers and greenery around our house, and it makes a simple but refreshing way to decorate when company comes. (As long as you are aware of alergies)

Just for fun, I was browsing around Better Homes & Gardens for ideas and inspiration, and I found these beautiful ideas:

Since we don't even have a fence, much less a gate, I thought that I might be able to do this on my front door... :)

When Company Comes, you should have.....Good Pancakes

This morning I made pancakes for breakfast. Not that you are terribly interested in that fact, or that I am terribly interested in telling you what I make every day for breakfast, besides the point that we had no company. But, there are some key points I thought I'd share, just for fun.

1) Neither of us are very fond of pancakes *gasp*
2) I think it's because I like "light" pancakes rather than very dense
3) This morning I thought to experiment with the batter to make it lighter (I think I read this somewhere at sometime, someplace)

The recipe calls for buttermilk, but I used 1/2 regular milk, and 1/2 ginger ale. :)
And it worked!

The result was a nice, fluffy pancake....without a hint of ginger I might add!

So, without further ado, here is a nice recipe for company pancakes:

1 cup flour
1 tsp sugar
1/2 tsp salt
1/2 tsp baking soda
3/4 tsp baking powder
1 egg
1/2 cup ginger ale
3/4 cup milk
2 Tbl oil

The other fun thing you might try sometime, is making cookie-cutter shaped pancakes!
I read this in a book, but the above image is as close online as I could get (every other instruction says to cook the pancakes and then cut them out...nah)

From what I remember, you would grease a cookie cutter (with oil), set it on your hot griddle, and then pour in batter. Let cook until brown and bubbly (like usual), but then, flip the whole works over. If the cutter was greased sufficiently, the pancake should slide down to cook the other side (and still keep it's shape). After that you should be able to remove the cutter.

When Company Comes....

Here is an idea we did while we had company over a while ago. In this situation, M. & Friend needed some quiet to do their Bible study, so Little Girl & I got to play.

It's not a very clear picture, but what we chose to do is throw a bunch of pillows, rugs, blankets, and boards on the floor and we had our very own "Green Sea" full of alligators and quicksand. (Yes, both in a sea)

We had treasure to keep away from the pirates, and so spent the whole evening jumping from lilly pad to lilly pad, squeeling away from aligators, and running breathless into our "cave" away from any pirates.

Above, Little Girl is trying to resuce Friend from said alligator....but it seemed a little late.

So there you have it....you don't need a bunch of stuff to keep kids happy if you've got a little imgaination and a lot of engery!

Keeping Kids Occupied


This post is more of a query than anything else :)

The topic of conversation: What to do when company comes over....with kids!

There are times, definitely, when it's GREAT to plan a kid dinner/party/activity, and invest your time in kids. But there are also times when you want/and or need to visit with the adults only. And that is this posts topic. What do you do to host families with kids, when you don't have any? When you want to visit with the adults and not only play with kids?

Question #1) Is it appropriate to want to visit with the adults and not play with the kids?

Question #2) What are the best "kid-friendly" games and toys to have on hand in your home?

Question #3) What are some great ways to make the whole family....kids and parents....feel welcome?

In lieu of these thoughts recently, I have started creating a Dress Up Box in my living room. While still sparse, I can see many opporunities for filling it up! Things I still hope to do: 1) Make a dress-up-corner with full length mirror, hat pegs, and play kitchen. 2) Add to the clothes collection

I know that my aunt has a kid-friendly cupboard filled with fun kid toys, that seem to entertain them just fine when they run out of things to do. She includes: toy cars, barbies, legos, noisy toys, puzzles, and rubber duckies.

And so, if you wouldn't mind, I'd be curious on your thoughts, opinions, and stories on this topic....please comment below!

Souper Ideas


Today, instead of writing my own (not so) brilliant ideas, I thought I would like to direct you to this great article: Souper Hospitality

Susan Ellington has some great thoughts and humor in her ecouraging article to show Hospitality.

"If you're a naturally gregarious sort, you don't really need encouragement to throw a little party. But if you have a more retiring nature, or you just don't know where to begin, don't worry. I'm here to help—and despite that earlier talk about "trouble" and "effort" it can be a whole lot easier than you think.

You can plan a party around any excuse or no excuse at all. I once threw a "Poverty Party" for those of us who couldn't afford our church's singles' retreat. The rule was you had to wear old clothes and bring food you had already paid for, which made for quite the eclectic menu. For years I held an annual birthday party for Sherlock Holmes. (He never showed, but he was in his 150's and it's a long flight from London to Texas.)"

Breakfast Ideas



One of the things I look forward to when company comes, is breakfast. I'm not sure why, but there's something exciting thinking up a yummy and beautiful breakfast spread. I have yet to accomplish this, but I'm still dreaming! :)


Above is a neat idea for "Breakfast in a Cup." (I actually don't know what grits are, but am hoping cream of wheat would suffice!)

One of our favorites was introduced to us when we were "company" at a friend's house: Blinis stuffed with sausage links. A Russian friend told us her favorite was to eat these was with fresh whipped cream and strawberries.

Sometime I'd like to try Bread Pudding, served with Maple Syrup and fresh fruit.

You could make a buffet style, help yourself type spread, and try these PB Granola balls with cubed fruit and cheese.

It's a Keeper



Here is an experimental recipe I tried the other week. We all declared it's a keeper! It's quick to prepare, simple, yet tasty and spicy. Easy to throw together for last minute company:)

Emily's Tortilla Wraps
  • 1/2 lb ground pork
  • 1 serano pepper
  • 1/2 onion, chopped
  • 1 tsp pepper
  • 3/4 cup salsa
  • 1/4 cup pepper jack cheese
  • 3 warm tortillas
  • leftover jar of spinach dip :)
Fry the pork, peppers,  and onion till done and juicy. Drain off grease. Add salsa and cheese and warm through. Warm up the tortillas, fill with meat mixture and a couple spoonfuls of spinach dip, and roll up. Serve warm with corn (or other veggie), salad, and chocolate pudding cake :) Yum!

Some thoughts on Bathrooms....


I know, we don't normally spend our thinking moments on bathrooms, and don't often bring the subject of them up in conversation, but I thought I might share a few tips on them anyway.

When company comes, it's a good idea to pay a little attention to our bathrooms. Now, I'm not one who has their's all fancied up with lace curtains and potporui and magazine racks, who has matching towels and painted cupboards. No, if you come to our house that's not my bathroom....you must've taken a wrong turn somewhere!

But, even if you don't have a designer home, there ARE a few things you can do to make your bathroom a nicer place in a jiffy:
  1. Re-load the toilet paper holder (bonus - have an extra roll available in a handy place)
  2. Change the garbage out
  3. Make sure there is a clean towel to dry hands on
  4. Wash the sink/counter
There you have it. You don't have to scrub the whole bathroom down if you're running short of time and high on stress....just a few touch ups like those above, make the bathroom nice and functional for you and your guests. (This is taking into account that a regular bathroom cleaning schedule is already in place :) )

One more thing I've noticed, if kids are coming over, is to leave the bathroom light on. We don't have windows in our bathroom, and it get's pretty dark and forboding at night when the hallway is dark. I've had much more success convincing a little kid to "try" if the light was on and they had a chance to "scope it out" (i.e. peek in while no-one was looking) first! :) I know this might be an electricity issue...but personally, I can deal with that more than other things ;) if it's only for a short time.

Some tips on making your guest feel welcome:
  • Greet them by name
  • Greet them at the door (if your soup is boiling over, do call a hello by name, manage your soup, and then stop what you are doing for a quick, face to face hello and then go back to your soup)
  • Relax.
  • Offer them something to drink
  • Sit down with them. (Works well to have a team-thing, making sure at least one host is visiting with the guest while the other finishes tasks)
  • Ask them questions. "How was work today?" or "How is your family?" or "What is new with you this week?"

Reasons to be Hospitable...


Last week, I found this great list of reasons to be hospitable! Check it out here. Here are some I particualrly like:
  • The host can practically prove his love.
  • He can get to know new people.
  • He can learn about other cultures without traveling.
  • He can learn to understand others better.
  • He can build trust
  • He can communicate important truths to his children.
  • He can accustom his children to the idea of loving all people.
  • He can break himself and others of prejudices.
  • He can learn to share and do without.
I still remember the great lesson I learned last year when 2 young mormon men stopped by, offering Bible studies.

I was shocked when I learned that Mathew had invited them in, had served them water, and agreed for them to come again! I was extremely uncomfortable with the whole idea. But the next week, I too was home when they stopped by. I followed my husbands lead, and offered them a cool drink and even some cookies I had just made. They were surprised. But I also know they could read my un-comfortableness all over my face too. Mathew easily conversed with them, listening kindly, and also directing them to verses, almost causually, during the conversation. He invited them back again. (His wife was fairly speechless)

After they left, Mathew and I began to discuss the whole situation. I voiced my concern. He warned me of fear. I told him it was silly. He said all things are possible with God. I said I was uncomfortable. He responded that we are called to love everyone. I said I didn't know what else to say. He said to pray about it. What could I do?

I did spend lots of time praying about it. I started reading a bunch more books too. I learned that I could lean heavily on God, trusting him for the right, gracious attitude, and for Mathew to have the right words. I can't tell you what a huge impact this had on me.

The next meeting, since we were running off to an appointment, Mathew casually asked them over for supper instead. What?! Thankfully I didn't shout out during the conversation! ha Goodness, this was taking my trust factor to a whole new level! But they agreed and set up a time. Sooner than later, I was making Taco Hotdish and cake and answering the doorbell to two people I never would have thought to have over. We enjoyed the meal together, learned about their families and their lifestyle, learned that they liked to play games...basically, I learned they were normal humans too!

Week after week, we deepend our friendship with these two boys through supper and board games. And through that friendship, we had many many deep discussions, flurries of questions from both sides, and a trust and understanding was built that otherwise would never have occured. I learned to practically put into practice the belief that God created all men equal. That God loves every one. That I can rely firmly on God's word. That I can love others, who are very different than me, finding out, they are not so different after all.

A couple months ago, the 2 young men had to move away to another assignment. We haven't heard from them since. But it amazes me still, how often their names and faces pop into my memory, and I say a quick prayer, wherever they are, whatever they're doing, that God will seek them out. And that someday, we will see them again.

When Company Comes....

I sometimes draw a blank when it comes to something to post. So I thought, maybe it's time for me to do a series....something that constantly inspires me or I have to talk about (like there's only one, ha ha).

So to help me (and perhaps help those who read it), I begin "When Company Comes..." Every Friday, hopefully, I'll have something to share, whether it be a tip, a recipe, a link, a flop, a story....we'll see what comes and goes!

First of all....we love having company. We really do. M. is much better at hosting and inviting than I am, but I am thankful I can live and learn! I think it's been so GREAT having lots of different people, friends and guests and family, all visit in our home. I have so many great people as examples too....but I'll share those later :)

Today, to start, I think I'll just share a recipe. And a cookie recipe at that. Warm cookies, right out of the oven with cold milk.....what can beat that! I remember eating these almost every week. We really went through the cookies at our house! But best of all, this recipe makes a big batch! Big enough for lots of guests, or sharing with neighbors, or even freezing for later!

Mom's Chocolate Chip Cookies
  • 1 1/2 cup shortening
  • 1 1/2 cup brown sugar
  • 1 1/2 cup white sugar
  • 4 eggs

Mix these together in big bowl. Then add:

  • 1/2 cup oatmeal
  • 1/4 cup powdered milk (or if you don't have this, add 2 Tbl regular milk)
  • 2 tsp salt
  • 2 tsp soda
  • 2 tsp vanilla

Mix. Then add a bit at a time:

  • 4 cups flour
  • 1 bag chocolate chips

Bake at 400 degrees F. for 10 minutes.

Yield: 6 dozen

Tip: Serve these warm out of the oven on a sturdy plate while watching a movie with friends, or playing a board game. Make sure to have napkins around too, as the chocolate chips are still gooey!
